I love old Christmas cards...
I'll be at my Mom's with much of my immediate family. Actually, only 5 of we 8 kids will be there this year. Well, of course the sisters will bring their husbands and kids too. My eldest brother has to work, my second eldest brother lives in San Fran and my eldest sister doesn't like Christmas...but, we'll have a nice day anyway. We don't really do anything Christmas Eve. It's just my Mom, brother and me -- everyone comes home Christmas Day.
Tonight, however, I'm hosting friends Scott and Roxann for dinner and drinkies. They moved here from California and aren't going home, so I thought they might want to get out of their apartment for at least a little Christmas fellowship!
I have this huge bag of egg noodles and some chicken breasts, so thought I could use those. I found a recipe that sounds easy and good to me. What do you think?
Ingredients:
7 1/2 cups (12 oz.) CREAMETTE Wide Egg Noodles, uncooked
OR 7-1/2 cups (12 oz.) CREAMETTE Extra Wide Egg Noodles, uncooked
2 cups (16 oz.) dairy sour cream
1 pkg. (1-1/4 oz.) taco seasoning mix
Salsa or picante sauce (optional)
Shredded Cheddar cheese (optional)
Sliced pitted ripe olives (optional)
Instructions:
Cook noodles according to package directions; drain.
Meanwhile, in medium saucepan, stir together sour cream and taco seasoning over low heat until warm.
Serve sauce over hot noodles; top with salsa, Cheddar cheese and olives, if desired.
7 servings (1 cup each).
VARIATIONS: Stir in 2 cups chopped cooked chicken pieces or cooked ground beef.
We'll also have some treats, salad and wine. They are bringing a dessert. Later will be a little gift exchange, some Trivial Pursuit and Cap'n Cokes. A very festive gathering, indeed! At least someone other than myself will see my Christmas tree, candles and other decorations...
